Observation: Cut vegetables stored below egg crates. Operator states all veggies will be cooked.
Containers of cut broccoli stacked on top of one another without lids in between.
Corrective Action(s): All meats/poultry/eggs should go below ready to eat foods including vegetables even if they will be cooked as best practice.
Do not stack containers of food without covering the food with a lid or other food grade covering.
Correct immediately.

Observation: Few mice droppings seen behind hand sink and prep table (hard to reach areas). Operator indicates pest activity has reduced since last routine inspection.
Corrective Action(s): Remove droppings and sanitize these areas. Continue to monitor pest activity and remove droppings as soon as you see them and sanitize these areas.

Routine Inspection
-Coolers at 4 C or below.
-Rice hot held at >60 C.
-Wiping cloths stored in sanitizer solution. Chlorine bleach used as a surface sanitizer and registered at 200 ppm.
-High temperature dishwasher registered a temperature of at least 71 C during the final rinse.
-Hand washing sinks equipped with hot/cold running water, liquid soap and single-use towels. **Ensure front hand sink near cash register is also used for hand washing.
-General sanitation and organization satisfactory.
-Permit to Operate posted.

**Odour near grease trap - grease trap may require more frequent servicing - please follow-up.
