In-house deli meat slicing program has begun. Meat slicer is sanitized with Chlorine solution using labelled bottles and crystal packets for dosing. Chlorine test strips present. Measured at 200 ppm.
Quats used for dishes and general hard surface sanitizing. Auto feed, spray bottle and sani-bucket measured at 200 ppm.
**If you run out of quats it is OK to use the chlorine sanitizer for all similar surfaces etc. Make sure if using for dishes in dish sink to add enugh pouches to have 100 to 200 ppm solution.
Cooling units less than 4 C.
Freezer at -20 C.
Hot holding at or above 60 C.

General sanitation and organization is good at time of inspection.
