Observation (CORRECTED DURING INSPECTION): Large pot of dal mixture observed to measure an internal temperature of 70C. Operator informed that it is cooled by constantly stiring with a fan over it for 3 hours to room temperature.
Corrective Action(s): Transfer dal mixture to shallow containers to ensure proper cooling or obtain cooling wand for cooling of large batches of sauce/gravies. All potentially hazardous foods must be cooled from 60C to 20C within 2 hours and 20C to 4C within 4 hours. Corrected by: Immediately.

Observation (CORRECTED DURING INSPECTION): Observed dosa batter stored under room temperature for 4 hours. Internal temperature of dosa batter measured at 20C. Soaked grain of rice observed to be stored at room temperature for 2 hours.
Corrective Action(s): Discard the dosa batter. Store the soaked grain of rice in a cooling unit able to hold an air ambient temperature of 4C or lower. All potentially hazardous food must be stored in a cooling unit able to hold an air ambient temperature of 4C or lower.

Observation: Ice machine observed to have built-up of meldew along the inside guard of the ice machine.

Corrective Action(s): Prepare chlorine sanitizer spray bottle and bucket to measure between 100-200ppm chlorine. Service the dishwasher to measure at 50-200ppm chlorine. Temporarily use 2-compartment sink to wash, rinse, and sanitize dishes. Facility to conduct take-out only until health inspector validates the low-temperature dishwasher is sanitizing between 50-200ppm chlorine. Corrected by: June 8, 2022.

Routine Inspection conducted today.

Handwashing sink well equipped with hot and cold running water, liquid soap, and paper towels.
Prep cooler and stand-up cooler measured at 4C. Stand-up freezer and chest freezer measured at -18C or lower. Hot-holding unit measured at 60C or higher.
In-use utensils are washed and sanitized every 2 hours.

Facility is to conduct Take-out only until health inspector validate that the low-temperature dishwasher is sanitizing properly.
