306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation:
Food debris, grease accumulation, and pooling water found on the floor of the walk-in-freezer; on the floor beneath the deep fryers; and around the drainpipe of the ice machine. This will attract and encourage breeding of pests.
Corrective Action(s):
Wash the mentioned areas with hot water and soap, and then sanitize every day to remove the food, grease and water.

Observation:
There are cracked floor tiles and uneven floor surface below and around the ice machine. Water and food will accumulate in these areas which will attract pests, and it is difficult to clean the uneven surface.
Corrective Action(s):
Repair/replace all damaged floor tiles so the floor is smooth, durable, level, sealed, and cleanable. Fill in any spaces between floor tiles where the grout has worn away.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers -16C or colder; hot holding units above 60C; thermometers present; and temperatures recorded daily.
- Quats sanitizer in spray bottle and cloth buckets was 200ppm.
- Hand sink stocked with liquid soap, paper towels, and running hot and cold water.
- All foods stored in food grade containers; labeled; covered; date coded; stored in groups with proteins separate from non-proteins; and stored 6" off the floor.
- No expired foods in use. FIFO rules being followed.
- General sanitation level is satisfactory, improvement needed in the mentioned areas.
- Exhaust canopy was clean.
- A new walk-in-freezer door and frame has been installed. No build up of ice observed.
- No signs of pests.
- FoodSafe certified staff present.
- COVID-19 plan in place and present. Masks worn by staff; no dine-in only take-out from an ordering window; hand sanitizer present; barrier at ordering window present; hydrogen peroxide disinfectant used on high touch surfaces; increased cleaning frequency (every 1.5 hours) of high touch areas; signs posted; and markings on outdoor cement to encourage 2m distancing of customers when ordering.
- Discussed inspection results with the manager, no signature obtained due to the pandemic.

**Condensation dripping from the cold case, holding the fruit toppings, in the cupboard below. There is some mildew forming as the water is pooling on the bottom of the wood cupboard. Clean and remove the mildew, and have a bus pan placed in the cupboard to catch the dripping condensation. Ensure the bus pan is emptied every night to rid of a pooling water source.***
