Food not cooled in an acceptable manner [s. 12(a)] (Observed deep fried pork at cook station at a temperature of 20 C. Discussed portioning again with operator and staff. Discussed time temperature relationship with food and that it is not acceptable to re-refrigerate such foods after a rush to be used again later. These foods must be discarded after rush.)

Comments

Hot holding unit not turned on (no food inside). Thermometer purchased - obtain one designed for hot holding as discussed. This will be reviewed at re-inspection date noted on report. Purchase immediately to verify that the unit keeps food above 60 C.
Drawer cooler at 4 C. OK.
Most old wood boards discarded. One kept for cardboard cutting purposes only. OK.
Re-inspect for general sanitation as discussed in mid July.
