Hand wash station fully equipped with soap, paper towel, hot and cold running water.
All cooler units (display case, under counter, sandwich prep, upright 2 door..etc) all less than 4C
Temperature logs kept up to date.
Hot holding of soup 64C
Premises does not have any freezers.
Reviewed heating/reheating procedures at time of inspection. Ensure foods are heated in microwave to 74C before transfer to preheated hot holding unit at 60C. Left over soup is discarded at the end of the day.
Good general sanitation. No obvious sign of pest activity noted at time of inspection.
Meat slicer was in use at time of inspection. Staff meat slicer is used approx 2x/week and it is taken apart all all parts a thoroughly cleaned and sanitized after each use.
Ice machine appeared clean with scoop stored upright with handle not in contact with the ice.
Chlorine sanitizer 100ppm. Ensure reusable wiping cloths are stored in sanitizer solution when not in use. Do not store reusable wiping cloths on counters.
High temperature dish washer achieved 71C (with thermolabel).
All foods appeared protected (ie. stored off the ground, covered..etc
Staff on site in operator's absence had foodsafe training.
