203 - Food not cooled in an acceptable manner [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Fries at over 60C was stored in the walk-in cooler, steam was noted from the deep tote of fries.
Corrective Action(s): Properly cool down fries from 60C to 20C at room temperature using shallow trays before transferring the fries to the walk-in cooler. Storing too hot of a food item in the walk-in cooler will not properly cool down food and also elevate walk-in cooler temperature.

Observation (CORRECTED DURING INSPECTION): Kitchen staff had mixed expectation for garlic butter stored at room temperature, some says 2 hours some says 4 hours. No label on insert.
Corrective Action(s): Verified with manager that garlic butter should be dated and labeled to be used within 2 hours. Please review the procedure with all kitchen staffs.

Observation (CORRECTED DURING INSPECTION): 1) Several ladles and scoops were store in the food (e.g. scoop in blueberries found in walk-in cooler, scoop for cheese curd, shredded cheese, salads in prep coolers). 2) Scoop for ice cream was stored in a container of standing water. Dipper well was not in use.
Corrective Action(s): 1) Either place the ladles and scoops so the handle is outside instead of embedded in the food, or place the ladles and scoops outside of the food altogether. 2) Staff turned on dipper well at time of inspection. Ensure not to store ice cream scoops in standing water.

Observation: Some fruit fly activity noted in the bar and kitchen.
Corrective Action(s): Do not let water or food debris to collect, remove spills immediately and ensure deep cleaning is thorough.

Observation: Small pool of water underneath the ice machine as well as paper products (Pirate Pak), red quinoa spill under dry storage shelving units and food debris collected under cooking line on both sides. Some cleaning under draft beer tap under bar.
Corrective Action(s): Please do a deep clean by follow up inspection.
