Observation (CORRECTED DURING INSPECTION): Channa masala in large containers found at 40-50C
Corrective Action(s): Cooling products in large buckets at room temperature will not cool rapidly enough to prevent dangerous bacterial growth. You can use shallow metal trays in your walk in cooler, use an ice wand and/or an ice bath. Ice wands are the best option given your small cooler and limited sinks (and lack of ice machine)

Observation (CORRECTED DURING INSPECTION): Crushed garlic product found in cupboards along East wall (near grill line).
Corrective Action(s): Discarded at time of inspection. Read the containers of products - if they say to refrigerate, keep at 4C or below.

Observation: Cupboards along the East wall in poor sanitary condition, full, and disorganized. Also found some refrigerated product getting stored in these cupboards
Corrective Action(s): Have these cupboards cleaned out, washed, then organize the products stored in them.

Display cooler up front ranged from 4C to 8C from bottom to top. Please service this machine to maintain 4C throughout. Recall the displayed temperature on the bottom is NOT the air temperature inside! It reads either the set temp or the air that is closest to the condenser. Use the thermometer inside
Gulab jamun lab tests have been done - as discussed on the phone, e-mail the results and I can tell you a) what the results mean, and b) whether or not your gulab jamun are "potentially hazardous food" as defined in the BC Food Premises Regulation. Continue to store in the cooler until I verify their shelf stability
General sanitation satisfactory with exception of the above noted cupboards.
Note: numerous products found "cooling" around the kitchen. Aloo tikki found just above room temp should have been put into cooler much earlier. Channa measured at 40-50C in old ghee buckets need to be rapidly cooled using either shallow metal trays, ice wands, or an ice bath. The current method of cooling in a 30C kitchen is not safe.
