Observation: Dishwasher not reaching required sanitizing temperature.
Corrective Action(s): Only disposable ware (plates, cups, cutlery etc) to be used for customers until the dishwasher is rechecked.

Observation: Baked goods were left on customer tables to cool.
Corrective Action(s): - All procesing including cooling must be done in approved food preparation areas and in a manner that the food items are protected from contamination.
- Proper cooling racks are needed due to lack of counter space.

304 - Premises not free of pests [s. 26(a)]
Observation: Dead mouse noted behind upright freezer beside backdoor. Droppings noted in other areas under shelves and equipment.
Corrective Action(s): - Clean up dead mouse and droppings.
- All food must be in pest roof containers, including bags of ingridients that are open. Open bags must be stored in pest proof containers overnight.
- All items in kitchen must be stored 15cm off the floor to enable easy access to cleaning. all items must be stored in shelves that are at least 15cm high or in cupboards.
- Install new screen door.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Cleaning required in hard-to-reach areas under equipment in kitchen. Cleaning required between counters and coolers in the fron serving area. There is a large accumulation of dust and dirt in these areas.
Corrective Action(s): Clean as required.

Comments

- Temperature of coolers and freezers were adequate.
- Liquid soap and paper towels were available. Ensure that hand soap is always present next to the hand wash sinks in the front and in the kitchen.
- Bleach solution was replaced in the spray bottle during the inspection.
