Routine Inspection

Food Temperature Control:
- Food in Walk-in cooler measured at or below 4 degree C. Thermometer noted inside the unit.
- Under counter coolers measured at or below 4C. Line cooler with insets measured at 4C or colder.
- Temperature monitoring log is to be kept on site and updated daily.
- Lamb shanks were observed cooling down after cooking in a shallow steel container. Food cooling procedure followed. Hazardous food to be cooled down from 60C to 20C within 2 hrs and from 20C to 4C within 4 hrs. Cooling procedure is to be followed for rice.

General sanitation and food safety:

- General sanitation is satisfactory. Thank you!
- Hand washing stations were supplied with hot/cold running water, liquid soap and paper towels in dispenser.
- Floors noted clean and food stored above the floor. Bags of rice are to be stored at least 6 inch above the floor.
- Kitchen back splashes and walls observed clean and free of grease and build-ups
- 50-100 chlorine residue detected at dishwasher final rinse water. Chlorine test strip available. Daily test of DW final rinse is to be conducted and record to be kept updated.
- Dishware stored in sanitary condition and protected from contamination.
- Ice maker was clean and free from build-ups. Ice scoop stored out of ice bin in a sanitary container.
- Customer washrooms were clean and maintained.
- No obvious sign of pest noted at this date.
- 100-200 ppm chlorine residue detected in sanitizer bottles. Bottles are labeled and in good working condition.
- Cutting board sanitation was discussed with operator.
