Observation: Container of raw chicken was stored on the cutting board/prep surface of the refrigerated make table where garnishes were cut.
Corrective Action(s): Protect surfaces from cross contamination by storing raw meats apart from areas for plating and handling of ready to eat foods. Provide with a sanitizer bucket and store clean wiping rags in it. Check the solution and change frequently.

Clean behind freezers to remove spills on the floor. Remove unnecessary items from the storage room.
Monitor staff to ensure hands are washed adequately. Ensure that a system is in place to prevent cross contamination, especially during busy times.
Temperature of the dishwasher is satisfactory.
Temperature of refrigeration units are satisfactory.
