Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Low Temperature Chlorine Dishwasher unable to sanitize dishes and utensils to the required concentration.
Correction: Repair dishwasher in order to adequately sanitize dishes and utensils. For the time being, use the manual dishwashing method and use QUATs sanitizer to sanitize all necessary dishes/utensils. Re-wash and sanitize dishes that were washed in the dishwasher.

Observation: Low Temperature Chlorine Dishwasher does not achieve 50ppm at dish level. Multiple runs were attempted, yet no success. The bucket of sanitizer contains active sanitizer that was tested via test strips.
Operator attempted to call technician during inspection.
Correction: Repair dishwasher so it is able to reach the required concentration to adequately sanitize dishes and utensils. Only serve single-serve containers, plates, utensils, etc. to the public until the dishwasher is repaired.

Comments

Follow-up inspection conducted regarding the repair of a low temperature dishwasher unable to reach required sanitation concentration. Refer to report #ATHI-C9QU2M.

-Operator called inspector to come check dishwasher as the technician had repaired it. The reason for the lack of sanitizer was due to a lack of pressure in the tubing resulting in the distribution tubes not transferring the chlorine sanitizer to the dishwasher.
-Dishwasher was tested via chlorine test strip at plate level. The reading was 50ppm chlorine which is satisfactory.
