Dishwasher has now been repaired to replace the heating element. Final rinse temperature registered 75.8 degrees C
at the plate surface. You must monitor and record dishwasher sanitizing rinse temperature every day on the log sheet.
Recommended using a max. min thermometer to check final rinse temperature.

All ready to eat foods are not stored away from raw meats and poultry.

* Replace or resurface the rusted shelves in the walk-in cooler (Dec 31, 2016).
* Walk-in cooler fan unit requires defrosting (By Dec. 25, 2016).
* The fume hood filters require more frequent cleaning. Ensure to thoroughly clean and sanitize the sinks after cleaning filters.
* Ensure to remove glue from the new stainless steel table prior to using it for preparing foods.
* Sushi chefs are now FOODSAFE trained.
