- Hand-washing basins are stocked with hot/cold water, soap, and single-use towels
- Refrigeration temperatures are ≤4o Celsius
- Freezer temperatures are <-18 Celsius
- Hot-holding temperatures (donair meat) are >60 Celsius
- Staff indicate at time of inspection that disinfectant wipes (Viroban Plus) are being used for sanitizing food-contact surfaces (cutting boards, food prep surfaces, etc.)
*Note: The product label for Viroban Plus disinfectant wipes require food-contact surfaces to be rinsed with water after the sanitizing wipes are used. Please ensure all employees are instructed to rinse food-contact surfaces with clean water after the wipes are used. Alternatively, you may wish to consider using an approved food-grade no-rinse sanitizer instead (eg. 100ppm Chlorine bleach solution, 200ppm quats solution, etc.)
- High-temp dishwasher achieved final rinse temperature of ≥71.7o Celsius
- Overall sanitation is satisfactory
- No pest activity observed during inspection
