Observation: Domestic fridge in servery area measured 10 C. Milk etc for coffee service. Significant frost build up.
Corrective Action(s): This unit must do better job of keeping foods below 4 C. Defrost unit. Place thermometer in unit and monitor. Re-shuffle food storage in servery and/or replace unit as necessary.

Observation: Observed food debris accumulating in many places of the kitchen. The following were as areas requiring specific action:
- Below deep friers station;
- Corner handwash station on cook line; also the other corner Handwash station and dipper well area;
- Black food dolly(s);
- Cook line floor (minor);
- Bar slushy machine (minor);
- Dry food storage bins (minor) (wheeled);
- Rear prep station - floor/corners;
- Walk-in cooler floor (minor);
- Walk-in keg cooler floor (**increase lighting - replace bulb);
- Walk-in Freezer - Defrost, clean up - audit condenser line for blockage and/or install door baffle to reduce ambient air flow into unit.

Corrective Action(s): Clean up and address other issues by follow up inspection date noted on report.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Chemical storage area continues to leak water and/or chemicals onto floor. Chemical odour evident in immediate area. Slimy matt accumulating in spots beneath containers and along floor wall interface.
Corrective Action(s): Improve daily/or more clean up and maintenance of this area to eliminate or substantially reduce ponding water and slime build up.
**Do not place or store brooms/mops on floor in this area. Find alternate location for broom storage. Water control must improve in this area. Consider relocating all containers off floor in area to allow easier cleaning by staff.

Comments

Dishwasher pressure valve faulty and machine turned off during inspection. Service agent called. Until such time the unit is again functioning properly ensure manual dishwashing is in place utilizing the three step process as discussed.
Drain/fruit flies observed in various parts of premises. Minor problem at present.
