The following items have been corrected:
-->Handwashing stations are free of items
-->Wine cooler now 4oC
-->Light covers present for all lighting in kitchen now
-->Scoops in dry goods containers have handles sticking out
-->Most of the cleaning required are now in sanitary condition

Still outstanding:
-->Some areas still require cleaning, such as floor under cooking line, and floor in walk-in cooler
-->Partially cooked foods are cooling at room temperature. Ensure time tracking is done. Cool in shallow pans and transfer foods to cooler for further cooling after 2 hours.
-->Cut vegetables are stored at room temperature with time tracking. After 2 hours, do NOT place food back in coolers, foods must be discarded. Foods can only be allowed at room temperature for 2 hours total, not 2 hours at each time.
-->Cooler "D" air temperature is 7.6oC. Bean sprouts is noted at 7.8oC. Technician has come in to clean out the filters. Have technician come again and ensure temperature is maintained at 4oC or less in all compartment. Please fax report to 604-918-7520 attn: Stephanie Szeto.
