Observation (CORRECTED DURING INSPECTION): Chlorine bleach in spray bottle was greater than 200ppm. Operator diluted solution to reach 200ppm during inspection.
Corrective Action(s): Operator must ensure chlorine sanitizer solution is within 100-200ppm. Operator given test strips so that they test solution themselves.

Routine Inspection:

- Hot/cold water, liquid soap, and paper towel available
- High temperature dishwasher reached 71C at plate surface or higher at plate surface
- All freezers were -18C or lower
- Preparation, sushi bar, and other coolers were 4C or lower. Preparation cooler for serving staff was 8C but operator stated that no potentially hazardous foods are kept in that cooler
- Hot holding for rice was 60C or greater; hot holding unit for miso soup was not functional at time of service
- Food storage practices were adequate; all food items were stored at least 6 inches off of the ground
- General sanitation and cleanliness was adequate
- No evidence of pest activity during inspection; Advanced pest control comes once every 2 months for inspection
