Observation: Accumulation of dirt noticed in the mop sink.
Corrective Action(s): Ensure to thoroughly clean the mop sink using hot water at the end of the day. Ensure mop sink is easily accessible for dumping mop buckets and washing mops.

* Dishwasher monitoring logs up to date, however temperatures logs for all coolers must be maintained daily.
Upright cooler below 4 degrees C.
Preparation cooler at 4.5 degrees C.
Upright freezer below -18 C.
Deep freezer below -18 C.
Liquid soap and paper towels available at the hand sink.
Quats sanitizer in the spray bottles tested 200 ppm.
Dishwasher contained 100 ppm chlorine at the plate surface.
General sanitation is satisfactory.
