HAZARD RATING FOR YOUR FACILITY: Low (≤15) Total Score = 12
Critical Hazards: There are no critical hazards.
Non-Critical Hazards: Total Number: 2
209 - Food not protected from contamination [s. 12(a)]
Observation: Ice machine is getting dirty and slime layer forming inside unit.
Corrective Action(s): Unit needs to be completely cleaned and areas of potential contamination removed.
Violation Score: 3

304 - Premises not free of pests [s. 26(a)]
Observation: Most of the kitchen area is free of fruit/drain flies, BUT there is a significant concentration of adults observed under the dishwasher counter and around the various bins (garbage, organics, and used saucers). The bins themselves may be contributing to brreding opportuinties. Floor in this immediate area caked with organic mat and stagnant water. Under side of dish station counter dirty. These may constitute significant breeding opportunities.
Corrective Action(s): A) Make sure all parts of the dish pit are properly cleaned on a daily basis. High traffic and/or heavily soiled parts of this station identified above requires extra attention. Waste bins must be cleaned daily inside and out (Add small amount of bleach directly to the inside of cleaned waste bins to deter fly activity).
B) Place a pan or bowl of vinegar and liquid soap mixture (make sure there is enough soap added to form and hold bubbles to capture adult fruit flies - use nozzle sprayer to maximize bubbles) in general area of concentrated fly activity.
C) Discuss issue with Pest Control. Have them provide advice and possibly added adult traps for key harbourage areas as discussed.

Comments

Construction work taking place in the back of the kitchen. Grease trap replacement. Issues include particulate (airborne/ground) migration, decontamination of waste water during and after trap replacement. Needed:
1) Improve the design of the barrier - Staff movement in this area is significant to and from office, staff washrooms and chemical room. Have a proper zip closing door for poly-barrier. Make sure the ceiling walls and floor are reasonably sealed to best isolate airborne particulates. Recommend placing a floor mat on the non-construction side of the barrier to help control the spread of construction material.
2) Make sure clean up/disinfection of liquid waste water from the removal and replacement of the grease trap includes the use of bleach at a 1:10 dilution (1000 ppm).
**Recommend staff washrooms not be used during construction work.
