Observation: Service technician was not able to repair prep cooler. Operator will be looking for a replacement prep cooler.
Corrective Action(s): Meat toppings in inserts were properly stored on ice during lunch rush. Operator will be continuing to discard any leftovers after 2 hours. This process of using inserts on ice is only being done during lunch and dinner rush, and is only a temporary solution.
Obtain new prep cooler within 1 month.

Comments

- As noted above, meat and other potentially hazardous food items used for toppings are being stored in inserts on ice during lunch and dinner rush only. Staff are discarding any leftover toppings stored this way after every two hours. This is only a temporary solution for the broken prep cooler.

- Ice scoop holder no longer being stored directly on ice inside ice machine bin.
- Food-contact surface sanitizer available at 100 ppm (chlorine residual) throughout kitchen (front and back).
- Back screen door has been replaced and provides proper screening from top of door frame to the floor.
