Corrective Action(s): - Ensure handles of utensils used to dispense products are not in contact with food products.

Observation: - Mouse droppings present on floor adjacent to chest freezer in storage room (where hot water tank is located). Appears to be limited to this area and may be from past issues.
Corrective Action(s): - Clean up droppings and disinfect area. Monitor for any further rodent activity. Ensure any additional droppings noted are cleaned up promptly and the affected area disinfected. Notify pest control technician if any further rodent activity is noted in this area so that additional control measures (eg. pest proofing, additional traps) can be applied in this area.
- Ensure this area is kept organized and free from clutter so as not to create any harbourage areas.

Comments

- Handsinks were supplied with liquid soap and paper towel
- Hot and cold running water supplied to sinks
- Coolers were operating at 4C or colder
- Freezers were maintaining food products in a frozen state
- Hot held foods were maintained above 60C (chicken 61C, cooked rice 67C, miso soup 65C)
- pH of sushi rice: 4.0 (with test strips)
- Chemical sanitizing dishwasher was operational. 50ppm chlorine detected on dish after cycle. Chlorine test strips present. Ensure dishwasher sanitizer concentration is checked at least daily.
- In use wiping cloths kept in bleach sanitizer solution. Concentration of solution measured: 100ppm chlorine (sushi bar area), 200ppm chlorine (kitchen)
- Reviewed storage of in use utensils with Operator. Spoons for rice to be kept in ice water. In use knives kept on clean surface and are to be cleaned and sanitized at least every 4 hours.
- Ice machine appears clean/maintained
- Exhaust canopy appears maintained and free from accumulation of grease.
- Operator present and has valid Foodsafe level 1 certificate
- Staff/public washrooms maintained with liquid soap and paper towel
- Premises has regular pest control service
