Observation (CORRECTED DURING INSPECTION):
1) The bread retard cabinet, in the cooler, has food stains & debris on the exterior and interior surfaces. The food debris will attract pests.
2) A knife, with food debris on it, was being stored on the magnetic knife holder. Dirty dishes and utensils will attract pests to the premises.
Corrective Action(s):
1) Scrub and clean the exterior and interior surface of the bread retard cabinet. Ensure this is being done on a regular basis.
2) Wash and sanitize utensils immediately after use and prior to storage to prevent pests.
During the inspection, staff washed the knife, and started cleaning the bread retard cabinet.

Observation:
The waste pipe under the 3rd sink, of the 3-comp. sink is leaking. The pooling water will attract pests and decrease the sanitation of the premises.
Corrective Action(s):
Repair or replace the broken waste pipe so that it doesn't leak. Mop and clean the floor throughout the day to rid of pooling water.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 40F or colder; freezer was -4F; hot holding units above 140F; thermometers present; and daily temperatures recorded.
- Hand sinks stocked with running hot and cold water, liquid soap and paper towels.
- Quats sanitizer in sink and spray bottles was 200ppm.
- General sanitation is good. Improvement needed in mentioned areas.
- Food storage practices done properly. Foods stored in food grade containers; covered; labeled; date coded; store in groups w/ meat on lowest shelves; and all foods were 6" off the floor on shelves.
- Food handling practices done properly. Disposable gloves used correctly; hands washed frequently; and utensils used to handle food.
- No signs of pests.
- FoodSafe certified staff present.
