302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] Observation (CORRECTED DURING INSPECTION): Quats spray bottle measured no residual and sprayer itself not functioning well. Main feed also not registering a residual with the test strips. Solution tested at 65 F. Corrective Action(s): Change to manual quats feed system and have main dispenser feed serviced. This will be reviewed at re-inspection date noted on report. Violation Score: 15 303 - Equipment/facilities/hot & cold water for sanitary maintenance not adequate [s. 17(3); s. 4(1)(f)] Observation: Hot water taps at main dish sink, hand wash stations in service area, and in the washrooms not dispensing hot water. Hot water supply stopped while auditing the quats dispenser at dish sinks. Existing 30 US Gal tank located above hallway to washrooms. Corrective Action(s): **Cannot operate without hot water. Operator volunarily closed premises until hot water supply is fixed. Plumber on the way. Operator will send picture of hot water coming out of tap when fixed and can open up when work completed. Violation Score: 15

Fill sink to desired level with water and add 3 oz of Quats. This will give you approx. 200 ppm solution. Cooling units all less than 4 C. Hot holding units below -18 C. General cleanliness good. Organization good.
