A routine inspection was conducted, the observations were found:
- Walk-in-cooler was 4C; pizza assembly cooler was 4C (lower part) and 10C (upper part); chest freezer was -18C; and upright freezer was 0C; hot holding unit 40C; thermometers present; temperatures monitored daily but not recorded. Ingredients in upper, pizza assembly cooler has low risk foods and amounts that are used within 2 hours. Decrease temperature and recommend storing foods in stainless steel inserts as they conduct cold air better. Foods amounts, in hot holding units are sold within 2 hours.
- High temperature dishwasher rinse cycle was 77C at the plate's surface as per max/min thermometer.
- Hand sink stocked with liquid soap, paper towels, and running hot and cold water. The hot water tap is broken but owner has replacement one that he will be installing.
- FoodSafe certified staff present. Certificates that do NOT have an expiration date will expire July 2018. Go to www.foodsafe.ca to register for the online refresher course.
- All foods stored in food grade containers, covered, and stored in groups with raw proteins on lowest shelf. Stainless steel pizza pan covers are in use, but also using damp sheets to cover dough. Sheets do not directly touch dough and are laundered every second day. Transition to using all stainless steel pan covers and discontinue using damp sheets.
- Sanitation level is good. No signs of pests.
- No expired foods found in use. FIFO rules followed.
- Bleach present for sanitizing. No solution in use during the time of inspection.
- All in order.
