Observation: Observed knives being stored in the gap between a table & cooler. Severe build-up of grime noted. This is a repeat violation.
Corrective Action(s): Do not store the knives in this manner as the knives cannot be maintained in a sanitary manner. The owner is to obtain a knif rack that can be properly cleaned & sanitized. DATE TO BE CORRECTED BY: IMMEDIATELY

Observation: 1. Dust accumulation on vent hoods
2. Severe build up of grime noted around the perimeter of the kitchen and under large equipment
3. The surface of coolers and dishwasher is dirty
4. The floor shows signs of wear. Areas where it is pealing off cannot be properly cleaned and traps food debris
5. The Shelves near deep fryer show signs of wear and are not easily cleanable
Corrective Action(s): 1. Deep cleaning is required throughout the kitchen. Pull out equipment, scrub all grime off and wipe down the outside of all equipment. This shall be implemented on a regular basis. DATE TO BE CORRECTED BY: IMMEDIATELY
2. Line the shelves with new, clean material so that it can be easily cleaned & sanitized. DATE TO BE CORRECTED BY: July 6th 2018
3. The floor requires replacement. Floor shall be smooth, durable and non-absorbent. DATE TO BE CORRECTED BY: November 1st 2018

Comments

- The facility is equipped with hot & cold running water
- Hand sink is stocked
- 200ppm chlorine residual detected in sanitizer bottle
- High temp dishwasher achieved 71C at plate's surface
- Temperatures of refrigeration units are adequate (<4C coolers, <-18C freezers), except for the prep line cooler which measured 6C at the time of inspection. The cooler was heavily used, kept opening & closing. Ensure to monitor temperatures and ensure that is maintains 4C at all times.
- Refrigeration units are equipped with working thermometers
- Dry storage is adequate. Foods are stored off of floor and in pest-proof containers once opened
- Lightings are all covered
