Comments

All coolers were < 4 C. All freezers were < -18 C. Invoices kept for all fish. Hand sinks supplied with hot and cold water, soap and paper towels. Discussed proper cooling of chicken. No evidence of pests during the inspection. Low temperature dishwasher had 50 ppm chlorine at the plate level. Check daily. Bleach sanitizer bottles were at 100 ppm.
