Observation (CORRECTED DURING INSPECTION): Foods in display case cooler were above 4C. Thermometer on display case indicated 18C. Internal temperatures of the foods in the cooler unit varied as some items were thawing out (quiche at 0.2C) and other items had recently just been made (sandwiches 14.3C). Staff to relocate all potentially hazardous foods that have been stored in the unit for less than 2 hours to functional cooler unit. Discard any potentially hazardous foods that have been above 4C for longer than 2 hours.
Corrective Action(s): Keep all cold potentially hazardous foods stored at 4C or less.

Comments

All hand wash stations were fully equipped with soap, paper towel, hot and cold running water.
All other coolers 4C or less (upright two door, prep cooler, under counter coolers..etc)
Freezers -12C and - 18C (Ensure all frozen potentially hazardous foods are stored at -18C or less).
No hot holding available at time of inspection.
Good general sanitation.
Dry storage area well maintained.
Meat slicer was stored away and appeared clean at time of inspection.
Ice machine appeared clean with scoop for ice stored handle up.
Quat sanitizer at source and in spray bottle 200ppm. Single use paper towels used to wipe.
High temperature dish washer achieved 71C (with thermolabel).
All stored foods appeared protected (ie. stored off the ground, covered..etc)
