Observation (CORRECTED DURING INSPECTION): -metal insert of lamb soup @ 35 deg. C internally in walk in cooler. Lamb soup was cooked three hours ago as per operator.
Corrective Action(s): -insert of lamb soup discarded during time of inspection. Potentially hazardous foods (e.g. lamb soup) must be cooled from 60 deg. C to 20 deg. C in 2 hrs & 20 deg. C to 4 deg. C in 4 hrs. Pour soup into smaller containers & submerge into ice water bath for rapid cooling. An ice wand is another option. Improper cooling can result in the growth of pathogenic bacteria.

2) noted newspaper lined on table shelving and near pots
Corrective Action(s): 1) 2) remove the cardboard/newspaper. The material is unsuitable for cleaning. Cardboard/newspaper lining is not a substitute for cleaning.
