Cooling records maintained since previous inspection. Cool process reserved for cooked small tapioca and egg pudding. Black rice and tofu pudding now purchased in pre-made form from approved supplier. 2 hour room temperature holding system maintained since previous inspection for tapioca pearls, rice balls and taro balls. record sheet, labelling and timers in place. hand washing facilities fully accessable for staff. ice blocks stored covered and off the floor away from garbage can. FIFO system for perishable food inventory in place. New steel sales counter installed, floor finished under new counters, protective film removed from steel, and seems have been sealed to allow for easy cleaning. display cooler 3 C - note ensure only deep food inserts are used that will contact the interior cold plate inside. premise sanitation has been improved
