Follow-up to routine food sampling results.

Tripe salad is prepared at commissary in Richmond and transferred to the deli in bags. Salad is prepared the day before, transferred to the store for sale and then discarded the next day (total of 2 days from production to discarding). Salad is held at temperatures at or below 4C.

-liquid soap and paper towel provided at handsinks
-review best handwashing practices with staff
-review best gloves use practices with staff

-Quat sanitizer @ 200-400 ppm
-test strips available on-site
-manual ware washing followed for salad serving dishes, tongs and holder
-tongs and holder washed and sanitized as needed or at least once every 2 hours
-ensure all utensils are air dried in a sanitary manner before storage

-new product is not added to old product for self-serve salad bar

-general sanitation and organization is good
