Food Handler Hygiene
o Hand wash stations are fully supplied with liquid soap and paper towels in dispensers
o Operators had clean clothing for food preparation and service (e.g. aprons).
-Washrooms are clean and fully supplied for hand hygiene

Storage Temperatures
o Cold holding Coolers are below 4C
o Cold holding Freezers are below -18C

Food Processing and Food Protection
o Cooling - Food appears to be in shallow metal pans, in cooler.
o Specialized Food Processing - Canning new item:
-Foods were tested during the inspection: Relish (pH 4.0, apple cider vinegar is an ingredient ) and Dragonfly Brown Sauce (pH 3.0, fruit based) and verified to be low pH
-Canning is done in pressure cooker in the facility.
o Approved Food Source - Operator keeps receipts of food ingredients from an approved source
-Donated items including meat come from an approved source.
o Food Storage - Food is stored in covered containers.
-Raw meats are stored on the lowest shelf
-Coolers are organized to prevent cross contamination

Maintenance and Sanitation
o Dishwasher - 50ppm Chlorine sanitizer
o Sanitizer bottles - have 800ppm Quats - ensure to dilute to 200ppm Quats - water was added to during the inspection.
-Recommend to have test strips in the facility to check (e.g. daily or weekly)
o Storage of chemicals is separate and away from food
o Condition of equipment and surfaces - food contact surfaces and equipment are in good repair and clean condition
o Pest control - Operators have a pest control contractor in place and there are no signs of pests at the time of inspection.
o Sanitation Plan - Operators have a sanitation plan in place
