Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: The Quats solution in the spray bottle is quite strong (400ppm). When asked how they test the concentration of the sanitizer solution for dishwashing, staff wasn't sure. Staff could only locate pH test strips which are not the correct ones for measuring the sanitizer concentration.
Correction: Purchase test strips for Quats Sanitizer. Staff should be trained on how to use the test strips to measure out the proper concentration of the sanitizer solution (200ppm).

ON FOLLOW-UP:
Hand sink in the back kitchen has been fixed. It's fully equipped.
The handle on the walk-in cooler door has been replaced.
Operator ordered the wrong test strips. The test strips ordered are for testing chlorine or bleach. You require test strips for Quats Solution. Operator will be ordering new test strips. Quats sanitizer in the spray bottle is at 200ppm. Discussed how much sanitizer is required for the 3rd compartment of the sink for dishwashing. It takes about 2 pumps to attain 200ppm Quats at the water line. USE TEST STRIPS TO MONITOR CONCENTRATION ONCE RECEIVED.
