- Handsink maintained with hot & cold running water, liquid soap and paper towel
- 200ppm QUAT sanitizer present
- Low temp dishwasher achieved >50ppm chlorine at sanitizing cycle
- Coolers were <4C and freezers <-18C
- Hot holding at 60C
- Probe thermometer was present. Ensure to use the probe thermometer to monitor for internal temperature of meat sauce during cooling and reheating. Cooling must occur so that temperature drops from 60C to 20C within 2 hours and then from 20C to 4C within the next 4 hours. Reheating must reach 71C.
- Ice machine was missing a lid. Lid shall be put back on to ensure that ice is protected from contamination.
