Observation (CORRECTED DURING INSPECTION): Large containers of cut/cooked potatoes were being stored outside of the cooler at room temperature. Container had been at room temperature for less than 2 hours. Staff transferred container to cooler and left portion out that will be used rapidly.
Corrective Action(s): Ensure cold potentially hazardous are stored at 4C or colder. Potentially hazardous foods that have not been maintained at this temperature must be discarded if time exceeds 2 hours.

Observation: As per previous report, mice are still present within premises
Corrective Action(s): Droppings have been cleaned and traps are present. Continue to monitor, clean up any droppings noted, fill in any holes/gaps and maintain the current sanitation level. If situation does not improve, a Pest Control company will need to be contracted.

Observation: Dishwasher is still not functioning. Operator provided invoice/service order from repair person. Parts are on order and expected to arrive on Tuesday, June 28/16. Dishes are currently being manually washed and santized. Staff responsible for dishwashing is familiar with proper method for manual washing.
Upright cooler is still not functioning.
Corrective Action(s): Repair dishwasher so that it is in good working order and capable of effectively washing and sanitizing dishes Correction date: June 28/16
Repair or replace upright cooler as it is needed in the kitchen to easily access foods for prep/cooking/service.

Comments

Cleanliness of premises has significantly improved since the previous inspection. Dry storage area has been organized and thoroughly cleaned. All items are now stored off the floor. Additional items at the back hallway of the restaurant have been removed. The shelving in the front service area has been cleaned and organized. The floor in the hard to reach areas such between and under equipment has also been cleaned. Interior of the upright cooler has been cleaned. Ensure that the premises is maintained in this condition. Sanitation plan may need to be updated to ensure cleaning frequency is sufficient.
Back doors were kept closed at the time of the inspection to prevent pest entry.
Liquid soap and paper towel were present at handwashing stations.
