Observation: 1. Front cooler holding cupcakes: panel at the bottom is missing, bottom is open. Drain pain contains debris, dust and other dark fluid.
2. Underneath black cabinet and brew bar: several milk lids, food containers and straws spilled behind.
3. Lanolium underneath main baking/assembling counter in kitchen is torn.
Corrective Action(s): 1. Clean out the drain pan. Cover the bottom or ensure it is sealed with a cleanable surface.
2. Clean behind equipment and between equipment. Check underneath for food debris on regular basis. (Today)
3. Replace/repair lanolium flooring in your main kitchen. Ensure all surfaces are cleanable material.

Comments

Food Handler Hygiene
o Hand wash stations are fully supplied with liquid soap and paper towels in dispensers
o Operators had clean clothing for food preparation
o Staff and Public washrooms appear clean and are fully supplied for hand hygiene

Storage Temperatures
o Cold holding Coolers are below 4C (items for high tea in cooler are below 4C)
- Cold holding Freezers are below -18C
o No hot holding at the time of inspection.

Food Processing and Food Protection
o Approved Food Source - Operator keeps receipts of food ingredients from an approved source
-Items such as cakes and cookies are baked at the Abbotsford location and transported over
o Food Storage - Food is stored in covered containers. Coolers are organized.

Maintenance and Sanitation
o Dishwasher - Final rinse temperature is >71C at the plate surface (74.3C measured)
o Sanitizer buckets - one bottle has 200ppm Chlorine
-Second bottle has >1000ppm Chlorine - ensure this is either diluted or used in washrooms only and not for food surfaces.
o Storage of chemicals is under the counter near other beverage bottles - would recommend that this is stored elsewhere away from food.
o Condition of equipment and surfaces - food contact surfaces and equipment are in clean condition
o Pest control - there are no signs of pests at the time of inspection.
