Observation: Grease was accumulating on the vent hood and food debris was found under equipment in the kitchen and bar area.
Corrective Action(s): Ensure facility is maintained in a clean and sanitary condition at all times to prevent potential pest infestation. Adhere to your approved sanitation plan.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1) Pasta cooler was at 7C. Staff member stated the cooler shuts off and needs to be manually turned back on
2) 2-compartment sink and front ice well area were found to have leaking water.
Corrective Action(s): 1) Adjust or service pasta cooler and ensure it can maintain 4C or less at all times. If cooler unit shuts off and needs to be turned back on manually, have cooler unit serviced to ensure it is in good working order.
2) Service sinks and fix leaks to prevent standing water.

Comments

-Walk-in cooler was at 3C.
-Prep line coolers and pizza cooler were at or below 4C (top and bottom).
-Bar area cooler was at 4C
-Walk-in freezer was at -18C.
-Chest freezer was at -18C.
-Hot holding was greater than 60C.
-Temperatures are checked and recorded twice daily.
-Chemical dishwasher had a final rinse 100ppm chlorine on the dish surface (minimum 50ppm required for proper sanitizing).
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Quats sanitizer pails labelled and tested at 200ppm (sanitizing solution to be changed every 2 to 3 hours, or more often if needed).
-Quats sanitizer dispenser was tested at 200ppm.
-General food storage practices good at the time of inspection. Foods stored off the floor and covered. Raw meat stored below ready-to-eat foods.
-Ice machine was clean and sanitary
-Facility serviced by a professional pest control operator on a monthly basis. No signs of pests noted at the time of inspection.
-Staff washroom clean and well maintained.
-Staff on-site had valid FoodSafe Level 1.
