Met with owner's wife and we discussed the following:

- daily logs
- food safe training
- cleaning and sanitation schedules
- back wall in the dishwashing area is cleaned and sanitized
- pest control is available on site
- keep all wiping clothes in approved sanitizer bleach at 100ppm concentration.
