Observation: The lighting in the kitchen is very dim. Many light bulbs burnt out. Lighting must be bright in the kitchen for cooking and cleaning purposes.

Comments

General Comments:
Dishwasher is currently broken - motor issues. A repair technician has been called and a spare part has been ordered from the East. Staff are washing dishes with the 3-compartment method: washing with warm soapy water, rinsing then soaking in 100 ppm bleach solution and air drying. Checked solution with test strips. More staff have been scheduled to facilitate dishwashing.
100 ppm bleach sanitizer available in buckets and spray bottles throughout the kitchen
Ice machine is free of mould and rust; ice scoop stored in a separate bucket
Cut vegetables are stored on ice
Proper cooling procedures are being followed: Cooked meat is cooled in a shallow metal pan on ice before placing into the cooler
Staff are knowledge of food safe practices
No signs of pests observed. Orkin pest control is on contract, approximately 1 visit monthly
All handsinks equipped with hot and cold running water, liquid soap and paper towel
Permit posted with valid decal
All coolers operating at </=4C ; freezers at </= -18C; hot-holding at >/= 60C
Temperature records maintained daily
Rice spoon stored in ice water at 0C
Foods stored mostly 6" off the ground and covered
