Observation (CORRECTED DURING INSPECTION):
Crate of eggs stored directly on top of uncovered chickpeas in walk-in cooler. Operator discarded chickpeas during inspection.
Corrective Action(s):
Store eggs towards bottom of shelf and ensure all raw meats are stored below ready to eat and cooked foods.
Ensure all products are covered with food-grade material.

Observation:
1. Fan cover in walk-in cooler has heavy grease accumulation.
2. General sanitation of kitchen, storage area and washrooms require improvement.

2. Clean kitchen, storage area and washrooms.

Ensure you are following your sanitation plan for daily, weekly, monthly and seasonal cleaning.

Observation:
Hand washing station in kitchen is missing hot water faucet handle. THIS IS A REPEATED VIOLATION FROM LAST ROUTINE INSPECTION. Operator was able to show how hot water comes out of faucet however there was no handle to easily dispense hot water.
Corrective Action(s):
Repair/replace handle for hot water at kitchen hand washing station. To be corrected by July 27, 2016.

Light covers missing in main kitchen. THIS IS A REPEATED VIOLATION FROM LAST ROUTINE INSPECTION.

- No hot holding at time of inspection
- Bleach for sanitizing = 100 ppm.
- 3-compartment sink used for manual dishwashing.
- Pest control in place. Operator had latest copy of pest company report available onsite.
- No indication of pest activity at time of inspection.
- Outstanding permit fee letter delivered at time of inspection.
- Outstanding permit fee collected during inspection.
