Comments

General Comments:
Coolers were 4 degrees Celsius or less.
Freezers were -18 degrees Celsius or less.
Temperature logs were being maintained.
Foods in the hot holding unit was over 60 degrees Celsius.
Condiments were time stamped.
Hand sinks were stocked with liquid soap and paper towels. DON'T STORE ANYTHING IN/ON THE HANDSINK (Handsink in the back had a pan being stored on top of it).
200ppm Quats was available for sanitizing.
Three compartment method of manual dishwashing is being employed.
Mgr on duty had FS level 1 certification (expires Aug. 4, 2023).
Exhaust hood was serviced earlier this month.
Ecolab pest control is on a monthly contract. Last report reviewed. No concerns noted. Operator mentioned that the staff washrooms and other restaurants were treated for cockroaches on October 4, 2022.
Upstairs storage room is organized. The cooler was at 4 degC; Freezer at -19 degC.
