Observation (CORRECTED DURING INSPECTION): At the time of inspection, no sanitizing solution was available onsite. Staff prepared 200ppm bleach solution during inspection and the concentration was verified.
Corrective Action(s): Ensure that an approved food grade sanitizer is available onsite at all times during facility operation.

Observation: *REPEATED VIOLATION*
The following areas were found to have food debris/dirt build up:
1. Along the walls throughout the facility
2. Inside stainless steel freezer
3. Floor of walk in cooler
4. Cooking equipment in the back kitchen
5. Underneath the dishwashing sink
6. Kitchen hood
Also,dirty wiping rags were observed on the floor or shelves
Corrective Action(s): 1. Deep clean the above mentioned areas and remove the build up. Ensure that the facility is maintained in good sanitary condition.
2. Soak the wiping rags in the sanitizing buckets between use.

Observation: One staff working at the time of inspection did not have FOODSAFE Level 1 or equivalent.

Comments

Routine inspection conducted.

- Walk in cooler recorded at 4C
- Pizza prep cooler at 4.2C
- Beverage cooler at 4.6C
- Stainless steel freezer at -15C
- No hot holding conducted onsite.
- Prep cooler in back was turned off and not used for storing food.
- All handwash stations had adequate supply of hot and cold running water, liquid soap and single use paper towels.
- 3 compartment dishwashing sink used for manual dishwashing. Staff knows the step by step process - wash, rinse, sanitize and air dry.
- Food storage practices were found satisfactory.
- Operating permit was posted at the front.
- General sanitation of the facility was NOT satisfactory.
