Observation (CORRECTED DURING INSPECTION): Build up of mildew inside the ice machine.
Corrective Action(s): Immediately drain, scrub and clean the inside of the ice machine with 100ppm chlorine bleach concentration. This will be checked during the next follow up inspection.

Observation (CORRECTED DURING INSPECTION): Plastic cup stored directly inside the designated handwashing sink.
Corrective Action(s): Remove the cup. Do not store any food equipment inside this sink. This sink is designated for handwashing only.

Observation: Observed cockroaches on the beverage cooler.
Corrective Action(s): Immediately call the pest control company for pest management. Deep cleaning will facilitate in pest management.

Observation: Build up of grease, dirt and food debris in the following areas:
- underneath the two compartment sink
- inside coolers (ie sliding door cooler).
Corrective Action(s): Clean the areas noted above. Implement a deep cleaning schedule to clean hard to reach areas (ie underneath sinks, behind equipment). This will be checked during the next follow up inspection.

Comments

- General sanitation is satisfactory.
- All handwashing stations are supplied with hot/cold running water, soap, paper towels.
- High temperature dishwasher achieved 71C at the plate's level during the final rinse cycle.
- Surface sanitizer available in white bucket in the main kitchen at 100ppm bleach concentration.
- Dry storage area has adequate space and wire racks.
- Downstairs storage unit has one freezer and dry spices, containers, beverages.
- FOODSAFE trained staff on duty. Verified at the time of the inspection.

Temperature control:
- All coolers at < or = 4C
- All freezers at < or = -18C
- Hot holding units > 60C.
- Immediately begin daily temperature log for all coolers. This will be verified during the next routine inspection.
