Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: 1. 50 ppm and 0 ppm chlorine residual detected in the sanitizer spray bottles in the kitchen area.
2. < 10 ppm chlorine residual detected in the low temperature dish machine. Food contact items are not being washed and sanitized properly.
Correction: 1. **Issue corrected at the time of inspection.** Staff remixed the bleach solution after issue was pointed out. 200 ppm chlorine residual was detected after the sanitizer was remixed. Please ensure that there is always 100 - 200 ppm chlorine residual available, test with the chlorine test strips that you have available onsite, to allow for effective sanitizing of food contact surfaces during food preparation.
2. Unable to fix the dishmachine during the inspection. Correction order issued. Violation was communicated to the operator over the phone and the current staff in charge. Dining area is to remain closed until the dishmachine is fixed and able to dispense between 50 - 100 ppm chlorine residual. Restaurant is allow to do take-out and delivery only at this time.
Any food contact equipment/ items must be washed, rinsed and sanitized with the 2-compartment sink until the low temperature dish machine has been inspected and able to sanitize dishwares properly.

Follow-up inspection conducted for inspection report# KLAI-CLMTFY
Correction order lifted as the low temperature dish machine has been fixed. 100 ppm chlorine residual is detected at the plate level after the rinse cycle. The restaurant is allowed to re-open their dinning area for the public.
Paper towel noted in the handwash station by the dishwashing area.
Bleach sanitizer spray bottles are noted with 200 ppm chlorine residual.
Did not observe any exposed food left at room temperature or in the cold storage units during the inspection.

No further actions required.
