Observation: Freezer currently at -7 to 0C. Many items inside, including buns, are only partially frozen.
Corrective Action(s): Adjust or repair the freezer so that it maintains -18C or below.

304 - Premises not free of pests [s. 26(a)]
Observation: 1. Area around the back where electrical components are installed still contain rodent droppings. Only one snap trap located (as well as one poison bait station).
2. Shelf underneath the sink in the rear hallway (across from the microwave) contain some rodent droppings mixed in with flower holders.
Corrective Action(s): 1. Remove the bait station. Bait stations are not allowed indoors.
2. Continue to coordinate with your pest control company to implement more monitoring solutions (e.g. deployment of mechanical traps) and assess building for any other areas where rodents may enter.
3. Remove the rodent droppings in the back electrical area and around the flower holder cabinet using a 1 part bleach, 9 part water solution.

Comments

Routine inspection conducted. Facility is generally very well maintained and operated, and in excellent sanitary condition. The following observations were made:

1. Temperatures (Max: 4C for coolers, -18C for freezers)
- Stainless steel stand up cooler (double-door) at 2C
- Single door cooler at 4C
- "Continental" brand freezer at 0C
- No hot-holding conducted on site
- Danby beverage cooler is currently not on

2. Hygiene and Sanitizing
- Hand wash station stocked with hot/cold running water, liquid soap, and single-use paper towels
- High-temperature dishwasher sanitizes at a final rinse temperature of 76C at the plate (Min: 71C)
- Bleach sanitizing solution present at 200 ppm. Ensure this is always present on-site whenever food is being processed
- Ice machine is in sanitary condition. Signs present to remind renters and volunteers to leave the scoop outside and stored securely - excellent
- Ventilation canopy and cook line is well maintained

3. Storage
- All food items are packaged or in food-grade containers
- Take-out containers and single-use disposables are stored in sanitary condition inside cabinets
- Pots, sieves, utensils, plates, cutting boards, and all kitchen implements maintained in good sanitary condition

4. Pest Control
- Pest control company conducts monthly checks - please email most recent report to the health inspector
- Back receiving area (exterior) is well organized, door is tightly shut when not in use

5. Administrative
- Permit posted and up-to-date
- Volunteer chef has FoodSafe 1

6. Recommendations
- Install mechanical traps in back storage area, especially near the electrical walls
