> Staff noted wearing hairnets and gloves.
> Walk-in cooler (shared with deli): 2C.
> Retail display coolers: at or below 4C.
**all coolers are equipped with a digital thermometer and are programmed to enter defrost cycle 2 times a day.
**ensure products are not stacked beyond the load line to allow adequate air flow in coolers.
> Reviewed cleaning and sanitizing procedures with manager. Entire processing room is sanitized between species of meat (pork and beef). A separate area is designated for salmon only.
> 200ppm QUATS solution available in 3 compartment sink for warewashing.
> General sanitation of processing room satisfactory.
