Observation: 1.Ceilign drywall found to be broken or have holes in the sandwich preparation area. This may expose the food products or food utensils to contamination.
2. Box or raw chicken breasts found to be stored next to a box of kale in main walk-in cooler.
Corrective Action(s): Repair or properly patch broken dry wall sections. In the mean time, do not store any food products or utenils underneath broken sections of the drywall ( Immediately).
2. Raw meats or poultry boxes must always be stored below produce or ready to eat items ( corrected during the inspection).

Observation: Build up of debris noticed in the following areas:
1. Underneath the raw meats/poultry storage shelves in Main walk-in cooler
2. Fan covers have dust build up
3. Meat crumbs on the mesh in deli display cooler
4. Water build up around the mop sink and ice maker.
5. Dust build up in the display cooler vents in front of the sandwich prep area
Corrective Action(s): Thorough cleaning required for all of the above areas to remove dirt and food build up. ( By October 3, 2019).

* It is recommended to use a new small cutting board if any ham or other deli meats are to be cut in the deli section.
* Clean the dirt build up ( replace water) for cilantro storage container in walk-in cooler.
* Ensure that cooler and hot holding temperatures are monitored and recorded every day.
* Clean and cover the juice extractor machine if not in use.
* Ensure that all floor drains are cleaned at least monthly.
