**items in all three chest freezers were solid to the touch.
- Thermometers were present. Recommend to start recording temperature logs to monitor the sandwich prep cooler as it tends to fluctuate in temperature throughout the day.
- Hot held rice: 67C
- No other hot holding at the time.

- Probed insert items ranged from 3.2C (cooked bacon slices) to 4.3C (diced red onions). Food stored in the inserts appeared to remain at 4C or colder due to the undercounter portion being able to maintain an air temperature of 3.9C.
- Inserts should be filled to only halfway to ensure the temperature of prepped food remains consistent throughout. Inserts that are too full may cause the more exposed portions to be above 4C.

- 200ppm chlorine sanitizer solution available in bucket under 2 compartment sink.
- Dishwasher achieved final rinse temperature of 77.2C at the plate.
- Noted proper thawing of frozen sliced meats in 2 door cooler.
- No signs of pests at time of inspection.
- Health permit posted in conspicuous location.
- FOODSAFE valid staff on site. Valid until May 2024.
