Ensure that temperatures of all coolers and the dishwasher are being monitored and recorded daily. Ensure that the grease trap is cleaned as needed. Bleach water measured 100 PPM chlorine residual. Liquid soap and paper towel available at sink for handwashing. Ensure that the handsink is used for handwashing and not the two compartment sink.
