Observation (CORRECTED DURING INSPECTION): - No sanitizer was in use for food contact surfaces (prep tables) in food preparation area
- Staff on duty did not know which product was to be used for this purpose
- In use wiping cloths noted on prep table and counter with no sanitizer in use
Note: A bottle of quats sanitizer was present and in use in customer seating area. Staff did not know where the container was filled from.
Corrective Action(s): - Ensure a food contact surfaces are cleaned and sanitized using a food contact surface sanitizer.
- Ensure staff are trained and know the product to be used and the sanitizing requirements for food contact surfaces.

Corrective action taken at time of inspection: In use wiping cloths put in quats sanitizer solution filled from dispenser in back room. Reviewed with staff when Operator arrived.

304 - Premises not free of pests [s. 26(a)]
Observation: - Mouse excrement present along the edges of the floor under the dry storage shelving and on the floor around the perimeter of the back storage room.
Corrective Action(s): - Move all items from the floor and thoroughly clean the edges of the floor in the above noted areas to remove all mouse droppings and sanitize affected areas with bleach solution. Keep floor area clear and monitor for any additional activity (ie. droppings). If any additional droppings are noted, clean up and sanitize area promptly.
- Retain the services of a Pest Control Technician to identify and address any entrance points and to set traps to address issue. Provide pest control service report to EHO for review.
- Info sheet re: Mice in food establishments provided to Operator.

Observation: - Operator was not initially present and neither staff present on duty had Foodsafe level 1 (or equivalent) certification.
- This is a repeat issue from the previous inspection
Corrective Action(s): - In the Operator's absence, at least one staff on duty must have Foodsafe level 1 (or equivalent). Ensure an adequate number of staff have completed course and have required certification to ensure this requirement is met. See www.foodsafe.ca for course information.

Comments

- Handsinks were supplied with hot and cold running water, liquid soap and paper towel
- High temperature dishwasher was operational and met required temperature to sanitize dishes. Temperature at dish surface: 73.9C
- Coolers were operating at 4C or colder and equipped with thermometers
- Freezers were maintaining food products in a frozen state
- Food products were stored and displayed in a manner to prevent contamination - wrapped/covered, dry goods stored on shelving off of the floor.
- Ice machine appeared clean and maintained with ice scoop stored in a sanitary manner outside of the ice bin
- Staff reported blender pitchers are cleaned and sanitized in the dishwasher after each use
- Permit to operate with valid decal posted in visible location
- Operator has valid Foodsafe level 1 certificate (not initially present during inspection)
