CORRECTED DURING INSPECTION. Cupboards cleaned and paper products discarded.

Corrective Action(s): Rodent infestation reduced. Continue to clean, sanitize and monitor for holes and rodents.
Cockroach infestation continues. Facility has obtained additional pest control company services. Pest technician servicing key areas with bait. Inquire with new company as to the success of fumigation in mall environment.

- Facility in GOOD sanitary condition
- Pest control program in place
- Coolers achieving temperatures of less than or equal to 4 degrees Celsius
- Freezers achieving temperatures of less than or equal to -18 degrees Celsius
- Hot Holding achieving temperatures of greater than or equal to 60 degrees Celsius
- Dishwasher achieving final sanitizing rinse of greater than or equal to 72 degrees Celsius at the dish
- Sanitizer solution in use throughout food preparation areas and at concentrations of greater than or equal to 200ppm QUAT
- Ice machine and scoop in good sanitary condition
- Proper re-heating methods observed for previously cooked food items
- First In First out and date stamping methods observed in use


NOTE: Significant improvements in sanitation of facility. Facility well organized. Lack of food items in hallway. No additional holes found. Continue to maintain high level of sanitation to prevent against further rodent infestations and reduce current cockroach infestation.
